I am thinking of starting my own fashion boutique. I am not sure which route to go. I would prefer that the business and my personal finances are not mixed up so I was thinking of making it a C or S corp. How hard is it if I were to change my mind and want to change the way my company is built?

Its doable, and not overly difficult. But it does take some work to change it later. a far as keeping finances separate, you can just keep a separate checking account for business and that pretty much keeps them separate in everything but credit. But in a new small corporation, your personal credit will be pretty closely tied to company anyway.
